Creole Rice

Ingredients:

4 strips bacon, diced
1 (16oz) can stewed tomatoes
1 c. water
1 1/2 c. Minute Rice

Procedure:

Fry bacon until crisp. Remove all but 2 Tbsp. drippings. Add tomatoes and water. Bring to a boil. Stir in rice. Cover, remove from heat and let stand 5 minutes.
